Baked goods, bake sale, and baked enchiladas...


I made these cobblers plus two more for the bake sale yesterday.
It's such an easy recipe... see below.

 Easy, cheesy enchiladas & homemade mexican rice.

Cobbler
1 cup sugar
1 cup self rising flour
1 cup of milk
1 stick of butter
2 cups fruit of your choice (i used blackberries and peaches)

melt butter in microwave. in a large bowl mix flour and milk. stir
in melted butter. next, whisk in sugar. mix well. pour mixture into
pie dish or 9x9 dish. add fruit and sprinkle 1/4 cup sugar over top.
bake 1 hour @ 350 or until golden brown.


Easy, Cheesy Enchiladas
8 tortillas pan fried until slightly crisp
1 package (2cups) shredded mexican cheddar
1/2 stalk cilantro
1/2 onion
1 can red enchiladas sauce

pour ench. sauce in the bottom of 13x9 dish. chop cilantro and
onion in food processor (or by hand, ugh) until very fine. fill
tortillas with onion/cilantro mixture and cheese, roll into enchilada
and lay on sauce in pan. repeat until mixture/tortillas are all used.
sprinkle remaining onion/cilantro mixture & cheese over top.
bake @ 350 for 30 minutes or until cheese on top is melted.

*casey requested i put green enchilada sauce on top after the
cheese, cilantro/onion. it was really good, but was in the original plan :)


Mexican Rice
In a small pan, warm vegetable oil over medium heat. Add 1 cup
of white, instant rice. Continually stir over med. heat until golden
brown. Add 1 can rotel, 1 tsp cumin, 1tsp chili powder, 1 tsp of
garlic powder, and one (rotel) can of water. Cover and let simmer
on LOW heat for 10 minutes, stirring occasionally.
